The recipe that I found follows for Potato Candy

Boil 1 small potato until done. Put the potato into a bowl and mash. Add enough powdered sugar to the potato until it gets firm. You can roll this out like a pie crust and spread it with peanut butter. Roll this up as you would a jelly roll and cut into slices.
