Title: The Use of Sucrose to Predict the Value of Potato Varieties for Processing

Description: The research for the relationships among the sucrose levels, harvest dates, tuber sizes and chip color after storage in six potato varieties is reviewed in this article. Results of the study indicated that the sucrose content could be used to predict the rlative chipping potential of selections from breeding programs or varieties after moderate to long-term storage. If was found that sucrose levels should be measured relatively early during tuber development when sucrose differences are greatest among selections or varieties under comparison. The Norchip variety came out on top in best color in chipping.
