dc.descriptionIn 1948, total milk production and consumption in the U.S. closely coincided yearly as the great bulk of milk output was currently consumed by the domestic market. The consumption of fluid milk, cream, butter, cheese, evaporated milk, ice cream and their demand were detailed. Dairy products were relatively expensive foods, compared with other sources of proteins, vitamins and fats. Therefore, consumption rates, varied closely with family income, particularly in lower economic classes. This paper goes on to break down the figures on dairy consumption based on economic status.
