dc.descriptionThe article begins with a description of the fermentation processes of wheat for baking. An old type fermentation cabinet of wooden construction had in use in this Experiment Station for a considerable number of years and from time to time it has been necessary to modify it to keep pace with changes in baking techniques and methods. When funds became available, the search for a new cabinet was began. The selection process of this new cabinet is given.
